Recipe for Truffle Chocolate Cupcakes

I got this recipe out of a Taste of Home Magazine. It has been my go to recipe for when going to a pot luck.

Truffle Chocolate Cupcakes

1 1/2 cups semi-sweet chocolate chips
1/2 cup plus 2 tablespoons sweetened condensed milk
1 teaspoon butter
2 teaspoons vanilla extract

Cupcakes:
1 package devil's food cake mix
4 eggs
1 cup sour cream
3/4 cup canola oil
1/2 cup water
2 teaspoons vanilla extract
1 cup heavy whipping cream, whipped, optional

For truffles, in a small saucepan, melt the chocolate, milk and butter over low heat; stir until blended. Remove from the heat. Stir in vanilla. Transfer to a small bowl; cover and refrigerate until firm, about 1 hour. Roll into twenty-four 1 inch balls, chill 1 hour longer.

For cupcakes, in a large bowl, combine the cake mix, eggs, sour cream, oil, water and vanilla; beat on low speed for 30 seconds. Beat on medium for 2 minutes.

Fill paper-lined muffin cups one-third full. Drop a truffle into the center of each cupcake. Top with remaining batter. Bake at 350 degrees for 17-22 minutes or until a toothpick inserted in the center comes out clean.

Cool for 10 minutes before removing from pans to wire racks to cool completely. Top with whipped cream if desired.

Quilts and girlfriends

Made Chocolate Truffle Cupcakes to take  to a sewing get together with some close girlfriends of mine. 

Have been looking forward to this evening all day.

The group of us has been working on some word quilts. Every other month we have a word tha we have to make a 12 inch quilt out of so far we have had the words:
Shoe
Hand
Sign
Flower
Selfie
Door
The have gotten the gotten the first 3 done have been busy to get the others done. Flower is now a work in progress. I will post all of the pictures of the quilts soon!

Keeping finger crossed

Hoping today will turn out to be a lucky day by either getting one of the jobs that I went to two interviews for today or by winning the Publishers Clearing House(which I am not holding my breathe on). 

I believe that the best thing a anyone can do is stay up beat with what ever they are facing. Always have to look at the bright side. Stress and worry will only get you down. What good is that going to do?

On the 2nd of this month I will have been married to my best friend for 23 years. I do not know what I would have done without him in my life. He is my rock and my support.

Memorial Day

After the last three days at the quilt show and seeing all of the Medal of Honor quilts. Makes me appreciate what all of our soldiers past and present have done for us. I am glad that my guild is helping in recognizing these wonderful men and women.

I am grateful that I am able on this day to be able to rest after three days at the quilt show. That is made possible for what the men and women have done for us.

Just thinking of what all the men and women have sacrificed for us to be able to go on with our daily lives it is something all of us should be very grateful.

Crazy week

I knew starting into the week was going to be one of those weeks. This week my local quilting guild (Smoky Mountain Quilters of Tennessee) has our local quilt show which will start on the 23rd but all of this week leading up to the show is the preparation for the show. Take In was yesterday and then today and part of tomorrow is judging along with afternoon and Thursday we will be hanging the show. Then the show will be Friday -Sunday. Friday will be a long day from 9 am til 8 pm  and Saturday 9 am til 5 pm and Sunday 11 am til 4 pm. I am looking forward to the show but know by Sunday I will be one tired girl.

Also with all of this going on in the back of my mind I keep thinking that a year ago this was the weekend that my husband had his heart attack and changed our lives to some extent.

Once again no hot water where we are having to live. Keeping fingers crossed that changes soon.

As the saying here in East Tennessee goes when it rains it pours. Went out to my car to go visit family and battery dead in car. Me and husband will be sharing his car til we can get a battery for my Explorer.
